situationA : 1 forest, 1 domain (2003) with 5 sites

situationB : 1 forest, 1 domain, 5 subdomains (2003)

What needs to be done if 1 site is "sold" and needs to be removed from the domain?
Is it possible to disconnect it from the WAN, and rename the domain.
Or do we need to use the act. dir. migration tool to copy all resources to a new domain.

You should be able to go in the Sites and Services Snap in and remove the site from there.

In 2003 you can rename the domain, but you are asking for trouble if you do so.

The migration tool work very well. I have used it several times on smaller network. 75 pc or less. Make sure the client are configured correctly for the migration and "DO NOT MOVE ALL YOUR COMPUTER ACCOUNT AT ONCE"

There is plenty of documentation on the Microsoft website about those tools.
