I'm new to Ubuntu Server and I'm in the process of installing a GUI. (Preferably GNOME). In Ubuntu help, there are 2 sets of instructions:

Quote -
sudo apt-get install fluxbox x-window-system-core xdm


Quote -
sudo apt-get install ubuntu-desktop
sudo apt-get install gdm
sudo /etc/init.d/gdm start
sudo dpkg-reconfigure xserver-xorg


Do I need to type them both or just the second?

The second set of commands will give you the Ubuntu Gnome desktop with graphical login screen.

so looking at that real quicky, I assume 'sudo apt-get install ubuntu-desktop' installs gnome?

I believe ubuntu-desktop is all the essentials, and then you have gdm, the gnome display manager, both of which are necessary for the UI to work.
