but there's none that have been named official, the only other server i've heard mentioned on the forums here is dynamic-squid or something like that
there have been several minecraft servers hosted by community members in the past.

If there is going to be server, it has to be diverse. Neowin members all have very different opinion and style. It would be best if you went with a server with 2 different worlds, one for survival, and one for creative.
yes there will be some kind of griefer protection, and i'd probably make a backup every few days as you never know when something could break (trust me, i've had experience with that before, it's not pretty)
Griefer protection is a must. Generally, best strategy is to have anything built be only destructible by mods. Permissions for stuff should be acquirable probably too.
Also, with such things there should be guarantees - if server goes dead, usually the work a player put into it is lost forever - this is bad.
Also some servers simply remove you, and sometimes your structures, if you don't play for some time... this is bad, I take 3-6 month breaks from servers only to come back to realize that I need to re-register and so forth.
