There use to be a toggle in display settings in Snow Leopard and Lion that placed a monitor icon in the menubar. I could click on that and there would be the last 3 resolutions I had used. This seems to be missing in Mountain Lion or perhaps the setting was placed somewhere else.

Does anyone know what I'm talking about?

I often have to lower my 27" cinema display resolution down to 1080p-ish when I play full screen Flash video or else I get choppy frame rates.

Maybe you can still bring over the OS X Lion Displays Menu Extras item to OS X Mountain Lion. It's located in /System/Library/CoreServices/Menu Extras.
