I have a NVIDIA GeForce GTX 560 and I want to use my plasma TV as a second screen.

I believe I need a DVI to HDMI cable.

I have noticed there are various types of DVI connector? (e.g. DVI-I (Single Link), DVI-I (Dual Link), DVI-D etc.

Which do I need?

DVI-D Single Link will be fine, but DVI-I would work too.

The only difference between the two is that DVI-I supports both digital and analog, while DVI-D supports only digital.

Single-Link supports up to 1920x1200@60Hz. Dual-Link allows up to 2560x1600 (I believe)
