For general purpose and very easy to use, Trello is quite nice. Free, has mobile apps for iPhone, Android and 8/RT, can export data, etc.
Not sure if it'll fit your project needs, but kind of partial to Yodiz for a hosted solution myself, agile, scrum, issue tracking, source control integration, has mobile apps, all that stuff, free for 5 users.
Friend of mine swears by OnTime (also geared towards developers), has similar features, along with plugins for Visual Studio, Eclipse, etc, not free though.

Can't comment on the iPad, but haven't had issues with the site on an Android and Windows tablet's browser. Supposedly they're working on an iPad app though, marked as in-progress on their board.
Trello looks awesome but I don't understand how they only have an iphone app and not an ipad app.

Yea for a general purpose planning system it's actually quite good, very flexible and absurdly easy to use.. kind of like virtual post-its on steroids. Lots of stuff you can put on the "back" of the cards, customize the workflow, etc etc. Very spiffy for a freebie.
I am definitely going to give this a try. Hopefully the actual app will be out soon but I can live with using it in the browser form for the moment.

Well, you already mentioned Evernote, I don't see why you wouldn't use that. It's probably the most cross-device compatible. Now that it has reminders and checklists, it's pretty functional as a project manager.

Structured properly, OneNote is actually quite a good way of managing a project - works for me anyway.
