When I installed XFCE on Ubuntu, I had the monitors mirrored. Fixed that with xrandr.

Now, I can't change to a nicer looking theme. There is no "Appearance" or "System Settings" under "System"

There a plugin I forgot?

It's not under "System", its under "Settings" at the top end of the applications menu :)
