Can I go back to El Capitan Final release from El Capitan 10.11.1 without losing anything?

I downloaded and installed El Capitan Final yesterday and all worked fine.....for some stupid reason my girlfriend checked the updates on my imac yesterday and installed the El Capitan 10.11.1 beta.......without me knowing.

Is there anyway that I can re-install El Capitan final edition without loosing anything? (I've downloaded the El Capitan installer from the App Store)

Sure, just reinstall El Cap 10.11 over the top. It'll work fine. I do this sort of thing on my Dev VMs all the time.

Lat year I screwed up Mac OS by installing the driver of an unsupported internet key. To fix it I had to reinstall the OS, however I didn't lose anything. It even remembered which windows I had opened when it crashed and they were there once I finished the installation process.

In theory you can just install 10.11 over 10.11.1, however, it's an unsupported configuration, and things may not work.

If it's your daily driver, just backup your stuff and do a clean install. It's not worth risking the stability of your main machine over.
