If I bought a phone that has Sense i would root it specifically to get rid of Sense :p well not just for that reason however, it would be the first thing I do. I prefer it over Launcher2 because it is more smooth and enables more customization (gingerbread theme to go with my BuglessBeast 0.6.2). Sense is ok it's visually pleasing but that's about it.. I used LauncherPro for a while however I got annoyed with a minor glitch where it would sometimes take up to a minute for my home screens to load after I exit the web browser or any game. And I would call sense stock because stock typically refers to how something comes out of the box not modded. Where as AOSP refers to a pure android base. I don't really think so. Definitely a waste of screen space right there. I have many times the functionality in the same amount of screen space using LauncherPro, and I am definitely not missing Sense in any way. Simply put; Sense doesn't make sense. Hurr. So I went back to stock. Odd, did you try messing around with the settings or asking for help on the LP forums before removing it? I've never had that particular problem (except when I was running custom ROMs and my phone would need rebooted, where it would be slow and what not until I rebooted it), but it definitely sounds like your phone is removing LauncherPro from memory or something wile you are running the full screen apps.Did you try any other launcers (adw.launcher is the other major replacement, there are others, but they are generally not as popular). And I would call sense stock because stock typically refers to how something comes out of the box not modded. Where as AOSP refers to a pure android base. That is my theory at least from what I gather from XDA-Developers. Good point, Sense is stock for HTC, and Motoblur is stock for Motorola. I've tried customizing my HTC Desire with Widgetlocker and LauncherPro Plus, but went back to default the same day. It just feels better and it basically just works without customization needed.
