Had they decided to milk that, I'd probably be upset. This way we get a completely new story, but we'll obviously learn a lot about what happened after the original series was done, without it forcing new conflicts in that world. And there couldn't be a new story with Aang without a new conflict. I'd hate it if that happened.
Sure, if you look at it as a "milking" angle but when you like a character, and get attached to them for 3 seasons it's not that much of a problem, and welcome for many, to see more of them. Besides, I doubt everything was rosy while Aang was around as Avatar.
