Trillian is one of the best I'd say. It's delightfully light on RAM too. I have the main window open right now using only 9MB of RAM. The conversation window styling leaves a little to be desired, but it's liveable.

I went to Trillian after trying a few. I love how you can continue a chat on your mobile or desktop with Trillian, it all works seamlessly.

+1 for Trillian. It has a few good skins too, if you can't stand the default (which I love personally). I actually went ahead and bought it to support the developers. I don't actually own a mobile phone, so there's no real use for the pro version.

Trillian is using 18 meg of memory right now. I am connected to AIM, MSN, Gtalk, IRC, and Skype right now. I have 6 chats open, as well.
