FF X was the easiest to digest because: 1) FF VII used the circle button for what 99.9999% of the games use the 'X' button for. Very annoying. 2) You don't have to click-click-click your way through scads of dialog. Everything's spoken in FF X. Other than those two gripes, both games are top notch. An engaging storyline, albeit somewhat linear gameplay, TONS of secrets, best minigame for any game EVER (Blitzball could be released as a game by itself), and one of the best game characters ever introduced -- Auron. What more could you ask for? Add: Final Fantasy IX & VII are also good choices, as you can play them both on PS2.
