In a word: you don't.

The VMM in OS X is one of the most effiecent ones in any os. There is no reason to disable it, and any 'tweaking' end users do will have no noticable impact on end performance. The only thing worth mentioning is moving swap space to a different physical drive (if you have two hard drives).
