I second Jewelry. You should know what type she likes. Earrings, Necklaces, Rings.....then get one already. Make it a nice one too.

Yeah, but the past two christmases i've gotten her a necklace and a bracelet respectively. And she lost the bracelet! Then, I got her a diamond engagement ring, so I was hoping that this christmas I could end the jewlery streak! Oh well.... :)

give her alot of chocolate and money to spend on herself, then when she is done with all that chocolate she wont want to go shopping on clothes because she will feel fat and she can spend the money on you :D

id have to say take her to dinner and romance her... pays off for both of ya huh... or just do something special that you both like to do... it really should be "the thought that counts" dont get a worthless nic-nak present... i hate worthless presents. "i got you this stuffed snowman w/ a corn cobb pipe" wow... worthless.

If you have such near you, you could take her to a Sephora store, sample all sorts of perfumes, and buy her what she decides is her favorite.

Clothing (like a sweater, shoes, purse, whatever) can be good if you know her tastes or find something you think would be good for her.

Especially if she's a fiance, I'd think it best if you can find something that reflects your knowledge of her personal interests. Depending on person / tastes / circumstances / something that's a break from routine, there are things like tix to local arts/cultural stuff, a notable plant, culinary stuff, a DVD player, a pet, books/CDs/DVDs, a printer/scanner, a PDA, a nice night out at a restaurant, camping gear, a digital camera, a photo frame, a vase....

Anything that the two of you could use together over the long-term, that reinforces your commitment to her as a fiance and shows you know her, is probably good.

Perhaps try looking at places like Illuminations (candles and stuff -- some unique things, some overpriced stuff), Restoration Hardware (probably far more interesting than you'd expect if you aren't familiar with them), and even Crate and Barrel type places. Maybe think of essentially buying for the two of you rather than just her (???).
