A great source for these types of questions is DistroWatch.com! They can even be used to look at RedHat vs. SUSE vs. Debian, or whatnot. The kernel is updated (but you can do that manually), and the different apps. You can do those manually, too. So, really, they are more-or-less just snapshots of the huge evolving Linux movement.
