Its firm, still tender on the inside. Just right But its a fine line, which unco-ordinated people have trouble finding. But if you can find it, its like hitting the G-Spot. We were taught that if who order your steak well done, then you get the worst cut of meat. Why? Because you can't taste the difference since you've had all the taste cooked out of your steak. So, if you order your steak well done at a restaurant, just realize that most of the time you are going to get the oldest, most diseased, grossest cut of meat that place has.
