If you are SSH'd into a server, your network administrator can't see what you are doing on the server unless they are keylogging you, or watching what you do on your screen with some remote control software. SSH is pretty damn secure. Now this is assuming that the server that you are SSH'd into is not on the same network that you think you may be watched on.
