Whatever you do, don't restrict any mobile version of your website to an iPhone's resolution. Rather, design your site to work well with all standard mobile resolutions such as vga, wvga, etc. Unfortunately I can't help you with a guide. I agree with that --- Anyway, here is a little something that came in useful for me. http://www.jqtouch.com/ but jakem1 is right, I wouldn't create a iPhone only site.
