For most icons (shortcuts & folders) right click on it, go to Properties & select Change Icon from there or Customise, then Change Icon. For some folders you'll need something like Microangelo ;)
absoftab
You can use several proggy's to make changes. Microangelo is fine, but E-Icons too hxxp://yyy.deepgls.com/eicons

DisinfectedDuck
FOOOD - a stupid question: what program do you use to view the icons when you take screenshots? (that shows all the sizes) thanks.
FOOOD
That 'aint a stupid question mate :) I use Librarian (from Microangelo). I right click on an icon, select Open With.. Librarian (select Choose Program if it isn't an option). Then I drag all the other icons I want to view as well into the librarian space & select Add Icons to Workspace. You have to select the second view along on the toolbar to view them like this (next to the magnifying glass.) If you want to save it as an icon library click on File, Save As Hope this helps ;) Love your sig by the way ;)
