Just wondering if my Xbox 360 has the 65nm CPU and 65nm GPU?

It was manufactured in September 2008 and its an Xbox 360 Elite.

Is that the Falcon or Jasper unit?

If you're thinking about picking one of the new models up, you might want to check that the manufacture date is no earlier than August 6, 2008, and lot number is 8031 or above.

Lot Number is 0836 and its the Lego Indiana + Kung Fu bundle (elite).
