So does a 5.1 mp3 listened to through headphones automatically just translate back to 2.1? I was wondering whether I'm missing any sounds listening to it through my headphones off my laptop.

Wouldn't 2.1 be two speakers and a sub?

Yes, so headphones are not 2.1

Yup. They would be 2.0. But imagine 2.1 headphones! that would be quite amusing to see.

It would be still as funny as regular "surround" (5.1/7.1) headphones.

Well that has 6 independent speakers. "Headphones" typically don't, and the OP didn't state any specific and fancy kind of headphones either.
