One of our once-a-year recipies.

Ground hot sausage + crumbled bacon, onions or what you like inside, wrapped with peppered bacon outside. Basting sauce of your choice (we use a hickory BBQ sauce.) Indirect heat BBQ or slow-bake at 300F.

We serve it with roasted veggies; small red potatoes, onions, carrots, garlic cloves, red pepper flakes and un-salted garlic pepper wrapped in foil and roasted until done.

NOT for those with an already high serum cholesterol

Could you give a little more detail on how you shape the loaf and quantities?

Sure. 3 lbs of ground meat, 1lb of crumbled bacon (per-cooked wt. & well drained, 1/2 cup of diced onions, 1/4 cup of the rest and unsalted garlic pepper and red pepper to taste. We mix with a KitchenAid and form a roll on foul. Refrigerate 3 hrs to set. Lay our 2-3bs of wide/long cut uncooled peppered bacon on parchment paper on a cookie sheet or rack, laying them out like this -

xxxxxxxxx xxxxxxxxxxxxxxx

xxxxxxxxxxxxxxx xxxxxxxxx

Etc,

until the rows add up to a bit more than the loafs length. Wrap the bacon around the loaf, pinning with round toothpicks. Put itin the oven/BBQ & cook.
