I've had that problem on my old machine and that had 256mb of RAM, if the hard disk is still going a bit mental after extracting then you may have disk write behind enabled, which means data is written to the cache first so it may seem to the computer the process has finished but all the information has not been wirtten to disk so give it awhile, watch the HDD light and make sure it's stopped before you do anything else. if the computer is still 'sluggish' you can either use a memory cleaning program like freeram xp pro (Free Program), or the best bet when you've given the computer a heavy task is give it a reboot, (turn the pc off, wait 10 seconds for the memory to compleatly clear and then turn it on again). having 1 gb of ram slowness like this shouldn't be a problem, have you checked to see if you've got alot of programs running, either you're own, or spyware or a virus, too many programs running and heavy work can slow any computer down.
