You'll have no ideas about half the stuff that goes on. 'Fight Clubs' as you like to call them, can be quite common amongst organised crime groups. Not quite as the film puts it but there's usually some money involved. A bit like street fighting. If you're into MMA there's a guy called Kimbo (youtube him) who started out street fighting before he got into MMA. He used to fight people for money, winner takes all.

Yup exactly. But it's not as shown in the film.

A lot of MMA, or here in the UK - boxing is popular - goes on in dodgy locations. Arches under bridges for example. Often mainly for gambling purposes.

Then some of these fighters go pro.

Another example is lucho libre in Mexico - a LOT of that goes on unregulated.

I'd like to see Kimbo get his ass kicked, he can punch but has no technique.

I'd like to see him fight in the UFC against someone with real skill.

Nope, and all 3 of Kimbo's opponents were weak. Kimbo hits hard, but he has no endurance, tires himself pretty fast.

He lost against a huge guy, Sean Gannon, who happen to be a martial artist and a cop but that was on the streets, not an MMA match.
