Signature edition is Ultimate Edition, the only difference is the signature on the packaging. So I use Utimate due to the language pack feature and it was given to me by MS. :)

from the Microsoft website it seems that really all you are missing is bitlocker, but you can get something like that for free if you really need it. You have a few other things but those dont seem very important.

On my netbook, I started out with Starter, then wiped everything to install RC1 Ultimate, but soon I'll be getting Home Premium.

Home Premium is all most people need. Most will go for Ultimate though because dude, it's Ultimate!

Home premium because I got in on the $50 deal on Newegg and Amazon (1 for my laptop, 1 for my desktop). Although seeing that you can get a 3 license upgrade now for about the same per license key, doesn't seem like I saved all that much by going early.
