I installed iTunes last week (on a clean Windows 7 install) and wonder if the issue has to do with the fact I'm syncing to iCloud? It seems you can sync between the iphone and computer or iCloud (not both) :/ I prefer to have contacts also listed in Outlook when I add them to my iPhone, but can't work out why it doesn't work anymore? I'm running Exchange 2010 Server, Outlook 2010 as a client and iPhone has Exchange account added to it where calendar events seem to work fine.
