If the program has an installer it is possible you're user account doesn't have permission to modify those files (hence the elevation request). Some apps come with uninstallers, you should use their uninstallers. Otherwise, I use AppCleaner (freemacsoft.net) because simply trashing them from Applications often leaves a lot of garbage behind.
