Reason I ask is because I was about to return the 8 core Mac and pay the extra $$ to get the 10 core but I don’t know what to do now.

There are diminishing returns on cores after a while. Unless what you do is heavily multi-threaded, you won’t take advantage of the two extra cores.

I’ll be working on Photoshop and doing video editing.
