I just shipped off an item that I sold on ebay..but I spelled the suburb address wrong on the box by one letter.

(I wrote Ashury instead of Ashbury)

It was a 1 letter mistake, and I included the post code, street address + number etc. Do you reckon it will still get to its destination or will they send it back to me?

I know in canada you could make a lot of mistakes and it will still get there as long as:

postal code is ok

and house number is ok

As long as the post code and house number is correct it should get there no problem.

as long as the zip / postal code is right it will get to the right town

I would contact the buyer and let them know of the mistake in case something happens.

I made a similar mistake. I posted to a suburb in Melbourne. I realised I made a spelling mistake AFTER I posted it. The buyer left me good feedback indicating that he got the item. I think they look at the Postcode and then the receiver's name to work out what the "real" town/suburb is.

Off-topic but, here in the UK the post code system is really good.

Take NP20 4NG

NP refers to a town/City

20 refers to an area in the town/city

4NG - refers to a street in that area. The last part can also be assigned to large buildings.
