I'll probably get in a lot of trouble for leaking this, but here's the actual selection screen from the latest build.

Wow! That's exactly what I don't want to happen! If that makes it to release, I had better be able to override it! I want to choose the interface for myself, not have it chosen for me based on a preconcieved notion that "Metro is only for tablets!!!11!!1!"

An easier way would simply be a question during setup if the device is touch enabled or not and then enable/disable the appropriate way to interact with Windows.
