BetaAddict
I'm in the same situation. Got my SGS2 two weeks ago. Also looking to root the phone and flash an unbranded stock rom of gingerbread. Did some searching around for possible methods and have a pretty good idea of what I need to do. It would be very helpful if someone else with an SGS2 can weigh in with some input. Chainfire seems to be the proven method and most support, but there are many variations of the guide (superuser vs superoneclick), for the process. wrack
I would suggest to head to XDA Developers. I am sure someone there would be able to help you out.
RageOfFury
I flashed my SGII with Lite'ning Rom v6. Loving this ROM so far. One of the best for the SGII. You can find more info over at XDA Developers
