Essential is, of course, a relative term, but here we'll collect an ongoing list of popular utilities and tools. This is replacing the aging list with a fresh new coat of paint :) This list is in a perpetual state of progress, so feel free to suggest new apps, and I'll try to collect everything here at the top. Anyhoo, on to the list:

• Fire - Fire is an open source, multiplatform instant messenger client based on freely available libraries for each "service." - Free + Open Source
  
• MSN Messenger - The official client from MS. Supports some things that the other clients do not yet. - Free
  
• iProfile - Allows you to edit and add a profile to your AIM name in iChat - Free

• BBEdit - THE text editor. Considered the best on any platform. - $179
  
• XCode - Part of the Developer Tools. You should have a CD of this with your Mac, but you should also download the latest version - Free
  
• CocoaMySQL - MySQL database frontend - Free + Open Source
  
• Fugu - Since I figure only developer-types would make the most use of SFTP/SCP, I've listed this here. Nice frontend for SCP with external file editing (edit files "live" on the server over SSH) - Free + Open Source
  
• SSHKeyChain - Manage SSH keys and have them automatically loaded. Never have to type in an SSH password again ;) - Free + Open Source
  
• SubEthaEdit - A Rendezvous based, collaborative and distributed text editor. - Free

• NetNewsWire - News feed reader and aggregator. Has a bunch of nice extras, such as blog posting. - $39.95
  
• NewsFire - Another news reader by the guy that did Aquasition - $18.99

• VLC - Media player with lots of format support options - Free + Open Source

• Path Finder - a comprehensive file browser for Mac OS X, which combines the best of Apple's Finder (viewing, moving, and manipulating your files) with some powerful, integrated utilities - $34
  
• Macintosh Explorer - Macintosh Explorer provides an alternative method of browsing your hard drives. As well, it provides a familiar interface for file navigation for Windows users converting to the Mac - $15.95

Not really. There's ThemeChanger, but just about all the themes released nowadays are in guiKit format, which is only supported by ShapeShifter right now.

iBatt - great for PowerBook & iBook owners. This application will give you a general idea of how much life is left in the battery overall and provides advanced information :) Demo quits 10 minutes after running (which is plenty if you just need to check the status of your battery)

Not really. There's ThemeChanger, but just about all the themes released nowadays are in guiKit format, which is only supported by ShapeShifter right now.

Use guiKitty (free) from Unsanity to decompile guiKits, then use Duality to apply the theme. Kind of a pain, but its free. Best option is to just spend the $20 for ShapeShifter, you can easily remake a miniscule $20. :)

Im so happy i found this software - its great for those who uses and loves the one-button apple mouse. It scrolls Cocoa apps by holding down command and moving the mouse just a bit down or up - and scrolls at different speeds depending on how much you moved the mouse - quirky explanation ;)

Still the best and unobtrusive iTuns Controller there is. Sadly it isn't developed anymore.
