A lot of the BioWare games comes to mind. Great storyline, well developed characters, and fun to play.. they'll stay with you for a long time. I've played a lot of good games and all, but most are pretty forgettable after a bit.

My absolute favorite would be Planescape:Torment I think. Probably the best RPG ever written. A close runner up would be Infocom's Trinity. Almost 25 years later and I can still say the story is haunting.. most games I tend to forget 25 minutes after shutting it off.
